Serve up a tasty twist to this fish favorite with our Pretzel-Crusted Cod recipe. The combination of pretzels, Italian dressing, Dijon mustard and apricot preserves creates a perfect seasoning for this mild, flaky fish. Great as a bite-sized before dinner snack or as an entrée, this recipe is packed full of flavor!

1/3 cup Italian salad dressing 1 tsp. salt 16 oz. Cod fillets 2 tbsp. vegetable oil 2/3 cup apricot preserves 1 tbsp. Dijon mustard 4 tsp. fat free half-and-half 2 tbsp. parsley (minced) 4 oz. Shearer's Pretzel Minis
- Combine salad dressing and salt in a small bowl. Pulse pretzels in a food processor until pretzels are finely chopped, leaving some small pieces (should make about 1 cup). Place in shallow baking dish.
- Coat each side of the fish with salad dressing mixture, and cover with crushed pretzels. Heat the vegetable oil in a large nonstick frying pan over medium heat. Sauté fish slowly, cooking 3 to 4 minutes per side, or until golden brown (internal temperature should reach 145°F). Keep fish warm.
- Whisk apricot preserves, Dijon mustard and half-and-half together in a small saucepan over medium-high heat. Cook until sauce is creamy and thickens slightly. Pour sauce over fish, and garnish with fresh chopped parsley, if desired.
