Hard-Boiled Egg Casserole

This casserole features Shearer’s Original Kettle Cooked Potato Chips, but not in a way that you would normally expect. This dish has it all: protein, flavor, cheese, and crunch—ideal for a family meal or for sharing!

10 chopped hard-boiled eggs 1.5 cups diced celery 2/3 cup mayonnaise 1/2 cup chopped pecans 1/2 chopped large green bell pepper 1/4 cup finely chopped onion 1/2 tsp. salt 1/4 tsp. pepper 1 cup shredded cheddar cheese 1/2 cup crushed potato chips Shearer's Original Kettle Cooked Potato Chips
- Preheat oven to 375 degrees.
- In a bowl, combine eggs, celery, mayonnaise, nuts, green pepper, onion, salt and pepper; mix well.
- Pour into a greased 11x7 baking dish. Sprinkle with cheese and potato chips.
- Bake for 15 minutes or until heated through.
