Coconut Chicken Strips

These crunchy coconut chicken bites make for a delicious weeknight meal or a tasty weekend appetizer. The sweet taste of coconut make these wholesome chicken fingers fun for kids!

    2 eggs
    1/4 c milk
    1 tbsp sriracha sauce
    1 1/2 c sweetened flaked coconut
    3/4 c crushed Shearer’s potato chips
    1 tsp kosher salt
    1/2 tsp fresh black pepper
    1 1/2 lbs boneless chicken breasts, cut into strips


    1. Pre-heat oven to 375°.
    2. In a medium bowl whisk together the eggs, milk, and sriracha sauce. Set aside.
    3. In a medium, shallow dish combine the coconut, crushed potato chips, salt, pepper, and cayenne.
    4. Dip the chicken strips in the egg mixture to coat, and then into the coconut mixture, coating completely. Transfer the chicken strips onto a plate and repeat the process with all the strips.
    5. Bake on a greased baking sheet at 375° for 15-20 minutes or until cooked through.

    I was reluctant to try these because I don't really care for coconut but I love the idea of coating with chips and sriracha. Turns out they were amazing!
