Coconut Chicken Strips
These crunchy coconut chicken bites make for a delicious weeknight meal or a tasty weekend appetizer. The sweet taste of coconut make these wholesome chicken fingers fun for kids!

2 eggs 1/4 c milk 1 tbsp sriracha sauce 1 1/2 c sweetened flaked coconut 3/4 c crushed Shearer’s potato chips 1 tsp kosher salt 1/2 tsp fresh black pepper 1 1/2 lbs boneless chicken breasts, cut into strips
- Pre-heat oven to 375°.
- In a medium bowl whisk together the eggs, milk, and sriracha sauce. Set aside.
- In a medium, shallow dish combine the coconut, crushed potato chips, salt, pepper, and cayenne.
- Dip the chicken strips in the egg mixture to coat, and then into the coconut mixture, coating completely. Transfer the chicken strips onto a plate and repeat the process with all the strips.
- Bake on a greased baking sheet at 375° for 15-20 minutes or until cooked through.
Leanne 1/3/2018 9:09:13 AMI was reluctant to try these because I don't really care for coconut but I love the idea of coating with chips and sriracha. Turns out they were amazing!
